Watermelon Mojito

Ingredients
  

  • 2 oz white rum
  • 1/2 oz simple syrup
  • 3/4 oz lime juice
  • 8-10 mint leaves
  • 4-6 diced watermelon cubes
  • Club soda

Instructions
 

  • Place mint leaves, diced watermelon and simple syrup into a sturdy glass. Muddle well to release the essential oils from the mint and juices from the watermelon.
  • Fill the glass with ice cubes.
  • Pour the rum over the ice, and fill the glass with club soda.
  • Using a barspoon gently (and briefly) agitate the mix to incorporate the ingredients.
  • Garnish with a watermelon slice and a sprig of mint and enjoy immediately.
