Watermelon Mojito

- 2 oz white rum
- 1/2 oz simple syrup
- 3/4 oz lime juice
- 8-10 mint leaves
- 4-6 diced watermelon cubes
- Club soda
Place mint leaves, diced watermelon and simple syrup into a sturdy glass. Muddle well to release the essential oils from the mint and juices from the watermelon.
Fill the glass with ice cubes.
Pour the rum over the ice, and fill the glass with club soda.
Using a barspoon gently (and briefly) agitate the mix to incorporate the ingredients.
Garnish with a watermelon slice and a sprig of mint and enjoy immediately.
