Cucumber Mojito

- 2 oz white rum
- 3/4 oz simple syrup
- 3/4 oz lime juice
- 8-10 mint leaves
- 6 cucumber slices thinly sliced
- Club soda
Place mint leaves, cucumber slices and simple syrup into a sturdy glass. Muddle well to release the essential oils from the mint and cucumber.
Fill the glass with ice cubes.
Pour the rum over the ice, and fill the glass with club soda.
Using a barspoon gently (and briefly) agitate the mix to incorporate the ingredients.
Garnish with extra cucumber slices and mint leaves and enjoy immediately, ideally with a straw or a stirrer to mix the flavors as you sip.
